The first time you see the Dolomites, you'll wonder how you'll ever be able to ski and snowboard down any of the mountains. The rocks slope down vertically, with no way to get down aside from with a parachute.
Is it possible to have “safe” and “freeride” in one sentence? Usually I would say that this is not wise or possible. Every time you head off-piste you take a big risk. Whether you know this or not is a completely different question.
The Alps are an awesome winter destination and there are many regions where it's worth going to. I actually love "driving" to the Alps, though it is a long drive from Cologne with around 8-10 hours.

What's wrong with the weather this winter?

I live 330 meters above sea level and usually we get a bit of snow at our place or close by (800m) within a 2 hours drive.

We had snow, but that was in October and then I was NOT prepared to enjoy it!
